I want to do some smoked salmon but I'm not using an electric smoker. How could I do this with my charcoal smoker and dial the temps in as stated above?

If you are gonna use baby make sure they are fresh. The last two times I have done baby's they were flavor enhanced and I wasn't a big fan of the flavor they used to enhance them with.
I'd say start with a meat loaf! Meat loaf is cheap to make and is amazing on the smoker! But if you want an actual cut of meat to smoke I say jump right in and do a brisket! Go big or go home!
