I also have a Trutemp. It is awesome! Always reads the proper temp. I have probably boil tested the trutemp just as often as the other. Since I had water boiling I may as well. But every time it reads right at 212.
2:15....Just probed the butt and she is sitting at 161 after 3 hours 45 minutes.
I also have a batch of BBQ sauce going. I took my recipe X5 I'll be canning 2 pints of the extra.
And if I am gonna have the smoker going I can't go with out some ABT's!

And I have that same thermo and it makes me mad every time I use it! The other thing you will find is you need to boil test it each time you use it. When the batteries get low it doesn't read a proper temp.
I personally don't probe any of my meat till its been on the smoker for 4 hours. I read on here that if you probe to early and you don't hit 140 internal temp by the 4 hour mark you take the chance of spoiling a good piece of meat.
