I'd like to add another facet to it as well, I have a damper on the bottom half of my fire box and one on the top half as well. What are they doing if I open or close one or both? If I have them...
OH, so you foil it at about normal completed cooking temps and keep foiled until it's 200, I hear? Do I keep it on the smoker in foil until it's 200 or take it off?

Reading this thread has made me think of something...if I smoke some regular hosehold items that normally I just microwave or whatever, I'll have to eat them that way forever. And I don't always have time to light up the smoker and smoke everything from gum to hotdogs.
Also it's always good to leave it out of your fridge for a few hours before you're going to cook meat letting it raise to about room temperature so you don't have such a drastic change in temperatures too quickly. That's always true for cooking meats.

Master Dman, how do you know what trees are what? I see downed trees all over but I have no idea what they are so I'd hate to just cut'em up and take'em home and have it ruin my meat. And in the winter, there's no leaves to help with finding out what the trees are.

Cured Apple? Sorry, but what is "cured wood?" Do you know people or is this wood on your property? I'd be willing to pay for it, but normally when I look for wood, people want to sell like truckloads of it...I don't have storage space for all that.
I've only smoked once, I did a 5lb brisket that ended up somewhat tough but smokey and still pretty damn good, and some pork ribs. I didn't have a temp gauge, so keeping my temp was impossible. I've since ordered that and hope my next experience will be a little better.
