Well I've been trying to post pics so I could ensure that I'm doing it correct but they won't load.
Wrapped 2 regular ole house bricks in foil, placed them side by side in my water pan, wrapped the pan in foil and left little sunk in spots on both sides to help catch drippings.

Sounds good. I've always had trouble being able to create a good crust or bark on my Q. This is what I will be doing different this time. No water pan, going with 2 regular bricks wrapped in foil and I will be spritzing the meat every hour with apple juice. Does that sound like I would be able...
Going to try csr's and cherry coke. I know to soak them in the cherry coke for several hours but should I add any other spices in with the coke and if so I need some ideas?

Spent a good bit of money at the grocery store yesterday but got 2 racks of baby backs, some extra thick pork loin chops, CSR's, chicken quarters, and some chicken breast. Can't wait to get them on my MES 40.
Mind did the same MES 40. Shocked my 3 yr old son and also shocked me. Called masterbuilt and they had me cut off the cord and identification plates off the unit and mail them in. They are sending me a new unit.
Looking into building a stand for my 40 MES. I don't want the one masterbuilt has out because it provides no storage and can't be moved around. I have zero metal working skills so it will have to be made out of wood. Anyone built one or have any ideas?

Brian, I already have the amazin pellet smoker on my bday wish list which is next month. I can't wait to get it. Where do you put your at inside your smoker?
I have a 40 MES. Should I fill my water pan with sand and cover with foil or should it be placed in something else. Also if I decide to use the brick method, where should I place it and will just ordinary house bricks work and how many?
