Anyone know why lately my hopper keeps catching fire, causing my charcoal consumption to go up dramatically? There's an actual flame in the hopper that reaches the top of my coals, causing everything to burn at once, rather than burning from the bottom without a flame, like it normally should...
With hot and fast, should I inject and/or wrap the brisket at all? Or should I follow a low and slow recipe, with just higher temperature and quicker cook times?
How much wood would you say you use per layer? That's what I've been doing with cheap walmart bags of wood chunks (Western), but I'm thinking of trying out fruitawood, and definitely have to be more stingy with those since they're more expensive.
Couldn't find a definitive answer regarding wood amount to use. Some say the meat stops absorbing flavor after the first hour or two and some use wood all throughout the cook, so I'm not sure what to do. Am I better off using 1-5 palm sized chunks in the beginning of the smoke (depending on cook...
I had a feeling that would be the case. I just recall reading that the smoke flavor isn't absorbed anymore after a couple of hours, so I wasn't sure how true that was and if I'd be wasting wood by adding more later in my cooks.
I'm so jealous of all you guys that get your wood for free and know how to distinguish the different types of wood. Unfortunately that's not an option for me, since I live in a townhouse.
Sorry, I misworded it. I kept the ash bin door open a few minutes, not the hopper lid.
The flames were completely over the charcoal, which luckily weren't filled up to the top.
I did give the grate a shake, though I can't say for sure that it was a good one. I'll be running the smoker again...
This may be what caused it. I forgot to shut my hopper door after I lit my starter on fire, because I usually give it a minute to stay lit before closing it, but this time I got distracted and kept it open for a few minutes before realizing.
As I'm writing this, the inside of my hopper is on fire and I don't know what I did wrong. I've used this smoker multiple times before and never had this happen, and tonight everything is in flames. I don't know if it's because I dumped the last of my wood chunks, or if it's because I'm nearing...

Anyone able to comment on burn time with royal oak lump? I feel like I'm getting less than impressive burn time in my 1050, as I've done about 15-20 hours of cooks and I'm already almost done with my 30lb bag.
