    HAD to start a build...

So, the events are getting bigger, the days can't be stretched any more than they are, just pulled off -another- 4 butt batch out of the BTLE, and tired of watching all these guys are building all these wonderful smokers without DOing anything about it. So! Got a tank from Southern States, the...

Reverse Flow using pipe instead of RF plate?

Not an expert either but with a pipe I wouldn't think you will get the radiant heat that you would with a RF plate.  I'd suspect the center would be hotter than the front/back of the cook chamber.

Cooking for 300 and have a few questions

Whoa.  Maybe I'm not reading this right and I'm not familiar with that calculator, but -- $200 to feed 100 people pulled pork?  That's $2.00/pp?  A sandwich at the road side stand is going to be $6-$7 per.  OK take away the $0.25 roll if you are using plates and $2 is  still not reasonable in my...

    Brinkmann Trailmaster Limited Edition

2nd shelf... I dunno... maybe if all you do is flat stuff i.e. ribs, wings maybe.  With pork butts in mine there's not much headroom left.

    Brinkmann Trailmaster Limited Edition

Hey where did you get that?  ...and it fits into the BTLE fire box?

    Brinkmann Trailmaster Limited Edition

Thanks for the comment.  CC temp was good, but then the stack on that thing isn't the heaviest gauge metal I've ever seen and it -was- kinda chilly and rather breezy - gusts 25-30.  'Spose I'll just have to be more careful and pick the weather better.  Hey, OT I know, but that -is- a nice rifle.

    Brinkmann Trailmaster Limited Edition

I've had my Brinkman BTLE for about a year and in general it's worked out pretty well (after sealing, etc., etc.) Fired it up today when there is a pretty good breeze blowing and whoa! the breeze can go right DOWN the stack to the point where sparks come winging out the firebox intake vent. CC...

    Ok, here we go.

Hey GO for it!  We sold our tavern going on 3 years now and ever since I keep thinking there is room in the area for a good BBQ restaurant.  If your location is good you should do well.  If nothing else, people will stop by to gawk at the equipment!

NSF ~ Does anyone know of Health Departments Requiring your smoker to be NSF Approved.

In my county here in Maryland the smoker doesn't have to be NSF but any cooker has to have a "closable clamshell-type hood covering the entire cooking surface that must remain closed during the cooking process" -- so smokers are OK by their very nature.  No open grills, though.  I'd check with...

    Question on chicken BBQ price

Oh my YES be certain what you get!  Had a customer whose brother was a food distributor present us with a frozen 80 lb pig real early one morning for a party that night.  He said the price was great...

Anyone have a bbq food booth. - I need to design a menu - need some help

We charge  the same for all sandwiches, all drinks are one price, but fries can be bought separately.  We get a lot of kids that just want the fries.  We do offer a chicken strips-with-fries same price as a sandwich.  And yes, keep it simple or your cash register person goes nuts unless you have...

wanting to start a food booth as well

I think I've made most of the mistakes that can be made.  That doesn't mean I don't make any now but at least they seem to be new and more interesting. I agree with everything JAX said and would add that when you figure the numbers make sure you have EVERYTHING in there for cost - even things...

"Baron Von Schwein" 120 Gallon Horizontal Tank RF Build. QVIEW!

Ahh yes, the Cajun Microwave.  55 gal drum with a vertical slit in the side and a pig hanging on a chain thrown over a handy tree branch.  Give it a kick now and then until it's done.

wanting to start a food booth as well

Echo what eman said - most events here will supply a single 15amp line, after that you are on your own.  Also more and more events require "quiet" generators like the 2000W / 3000W Honda models.  Go with gas or chafers wherever you can for heat and coolers with ice for cold. CHECK WITH THE...
