    I picked up an old stainless control box from work, I would guess any metal but galvanized would be safe as the temps don’t get high inside the box

    I’ve had masterbuilt electrics for over 6 years, very little to no issues. I have improved my most recent 140S, but had no issues with unit prior to modding it for temp control. It now holds within 1 degree, so the design isn’t flawed. Good luck with your traeger!

    I should have mentioned, I use an amnps tray and mailbox mod. It is the WiFi Auber model WSD1500H-W. Yes modding the box was easy to do so it’s power on all the time through factory snap disc .

    Although the Auber is expensive, it is a real game changer plug and play (almost)unit. Literally holds within 1 degree once its set up. This is a screenshot from the Auber app on a turkey breast I smoked a couple days ago. It’s what the masterbuilt needed from the factory.

    Looks good, I considered a similar box but I was concerned there wouldn’t be sufficient airflow to the pellets with the doors closed. Have you run it successfully with the doors closed?

    I averaged 8 hours over the last 12 cooks with the pellets I use. I don’t think you are far off of normal imo.

    I have the WiFi model from Auber, zero regrets. My smoker tuned with that pid cooks faster and more evenly.

    This was a single step cook to 160F. If I would have used a step 2 it would have been 100F for 4 hours just to keep it warm. The parameter page up above was a prior cook

    Good call! I did one very similar but I cubed and smoked it for about 3 hours prior to crockpot and used all the ingredients you have minus coriander and cumin, added hand ground cayenne and a bit of chipotle seasoning. It was fantastic!

    I dont see any good photos of the inside, but it looks identical to the 140S , but has the added legs. I added the legs to my 140S , and it works well for me, but i modified mine. Mailbox type mod and WiFi Auber pid. I love it though!

    Temp on a MES30

    Something sounds off about this, like the box temp. I have owned 3 mes30 and an mes40 and not a single one was within 15 degrees of actual temp. With that said, a 3 lb. piece of meat shouldn’t take anywhere near that long. Is your meat thermometer calibrated accurately?
