Thanks for the positive responses!!! I followed Jeff's instructions on cooking a turkey (I think I had them printed out from last year) 225 deg for 6-7 hours for a 12lb bird.

I've been letting mine soak for a awhile. The first ones I tried were a little weak. This weekend I'll get a few out and try them. Now they've been soaking for awhile I'm thinking that they will be a real treat with a couple of beers....

I have done about the same thing as you mentioned about the small pieces/saw dust with chunks on top, and It lasts me a while but I'd like to get more time...
Ok..... Where lack of smoke is concerned, I have a question..... When the wood is pretty much charred and I look in the smoke box and all I see is black and smoldering charcoal, am I still getting anything out of it?? Or is there no smoke from this?

Those look good!! I'd try them except I'm ignorant regarding what to pickle them in. Does anyone have a good recipe for what to pickle them in?? My boys and I love pickled eggs, but I've never tried to make any at home. Having them pickled and smoked would be a real treat.....

I did two chickens on Friday and they came out crispy, but the skin was a trifle on the tough side. I don't know what can be doen to minimize that..... I cooked to 190 internal temp.

I have a Brinkmann and a GOSM and both work well in the weather we have had lately. As for NE weather....I live in Beatrice and I smoked some stuff in the GOSM just before Christmas when it was cold enough to freeze the water pan after I let the fire go out.
