    Fire control

+ 1 on what Al said. I have an 15 year old Oklahoma Joe Longhorn and run with the firebox door wide open and no baffle on the stack. Are you burning wood or charcoal? I only burn wood. I tried charcoal but it was too much of a pain and the flavor was not what I prefer. What I find helps is...

Looking at getting into the world of stick burners

You might want to check out Lyfe Tyme out of Uvalde. Also, Shirley Fabrication, Tuscaloosa, AL has a Patio Model with lots of room, lead time of 4 to 8 weeks.

    Questions about my new smoker

The creosote should just burn off with the higher heat. You might want to build a good fire and not put anything on the pit for a while and take a look. I would not want pieces to fall off on the ribs, butt, brisket etc.

    Questions about my new smoker

The shiny stuff is creosote from smouldering wood. It can make the meat very bitter. Don't stress trying maintain 225. Pork butts are very forgiving. You can do them from 225 up to 300 and everywhere in between all during the same cook. You don't want to see any white smoke, just thin blue or...

EVEN HEAT DISTRIBUTION (tuning plates and water pan) questions

A bulkhead is a wall or divider, sorry, its a Navy term. Look at the right side of the picture. The far right is the firebox wall, then the air gap, then the heat diffuser, then two plates.

EVEN HEAT DISTRIBUTION (tuning plates and water pan) questions

Kevin - I use an older Oklahoma Joe Longhorn. The CC is 40" long. When I first installed the deflector on the FB bulkhead the temps were very uneven end to end by about 30 to 40 degrees. I spent about 4 hours and a bag of lump experimenting. When I opened up a 1" air gap between the bulkhead and...

I seriously suck at fire management. Someone please give me some tips

Consider a Kindling Cracker from Northern Tool. Small splits catch quickly and make fire management easier, but you have to add them more often. Pre-heating your splits on top of the firebox helps. Also is there an air gap under the wood or is it directly on the bottom of the F/B? If on the...

help choosing between two pit smokers

The 16" width on the Yoder will get too small too fast. If you get the Luling, go with at least the 20" width x 40" , you might want to jump to the 24 x 48 if you can. I have an older Oklahoma Joe 20 x 40 and it works well for me but I would not mind a little more space. Last week I cooked two...

    Brisket questions

When you cook a brisket, start checking it when the internal temp in the thickest part hits 195. It is done usually somewhere around 200 up to 210. When you poke it with a probe, toothpick, or whatever and it is like pushing into soft butter, its done. I wrap in butcher paper just after the...

    First brisket

I know it's past your cook date, but my last 5 briskets were cooked at an average of 271 degrees and took 43 minutes per pound, start to finish. I log everything and ran the information prior to smoking a 15 pound (after trimming) prime brisket. I ran a little higher temp on it and it took a...

    Split Size

I purchased a Kindling Cracker from Northwest Tools for this very reason. It easily reduces larger splits to a manageable size which makes it easier to get even temps. I just wish I had purchased one much earlier. I cook with my FB door wide open.

    Question about Fire Bricks

For what it's worth. I have an 16 year old, New Braunfels Oklahoma Joe Longhorn. I tried lining the bottom of my firebox about half way up the sides with thin firebrick from Tractor Supply. I found that by doing this my draw was decreased. My first cook this year it was hard to get above 230...

What is on the inside of my smoker?

I got a bunch of white ash all over when I tried a different brand of lump from Restaurant Depot. When the bag was gone, the white stuff stopped. The lump was from south of the border somewhere.

Not able to reach temp after tuning

All good advice. Also make sure that you have about 3" below the FB grate for airflow. On my 15 year old Oklahoma Joe I increased to a 4" wide stack with the length is based on http://www.feldoncentral.com/bbqcalculator.html . I think the original stack was less than 3" in width.

    buying firewood

banderson - I am up Hwy 280 from you in Chelsea. I buy wood from Alabama Forest Products in Helena. They supply restaurants in AL with splits of oak and hickory. You can buy it green or seasoned and in different lengths. I purchase the seasoned, cut offal which are about 10 to 12" long for 8...

    Stick Burner HELP

I understand. Mine is a newer unit so I am sure when the original company sold out many design changes were made. Try running your actual stack numbers through the calculator and see what length it comes up with. It might be a simple mod with what you already have. There are many of the...
