Well, I called my mom whose got some Ukranian background and from Poland in the off-chance she might know. Unfortunately pastrama does not seem to be a meat or food from those countries that she ever recalls or has heard of. I did get her secret family recipe for the head cheese though.

If you want to pull it, after it gets a nice color from the grill, your gonna have to bring it up to near 200. I foile mine after about 165 or so and then keep it off the direct heat, or you can finish it in the oven. It pulls real nice and I'm starting to prefer it that way for tacos and burritos.

Oh wow what a great idea! I'm shaking my head in wonder..I love it! Pepperoni outside a meatball. What a great combo and thanks for sharing...I'm with you on the idea that maybe a rub or spicier sauce might be better with them; pepperoni has an edge to it that won't go with everything.
Good grief Tony, you did a geat job on this smoke! Where was it hiding? Loved the chicken/shrimp combo and that Cajun sausage looked mighty fine too. Glad it worked out well and you all enjoyed your feast, 'cause I sure enjoyed the Q-Vue!
