Need help picking a Meat Slicer

I agree with smokinAl . I would try to find an older commercial slicer. I found a old hobart and paid $180.00 for it. Cleaned it up and use it all the time. The older stuff was made to last......they are very heavy....need to have a dedicated spot for one of these. Just my 2 cents.

I fry it in lard ...let cool... and into a zip lock and to the frig.....A little each day mixed in her food and she is a...

    Help identify

While at Thanksgiving dinner a relative pulled this out of his garage. It is cast iron and about the size of a 5 gal. bucket. Inside it has 2 cast iron grates that sit on 3 half round  bulges cast into the side walls. The part coming out the side and the top both have holes about 1/2in.that go...

    Pulled squirrel samies Qview

I think it taste more like bald eagle than chicken. [ just kidding ] Just give it a try ,if you like most wild game I think you will enjoy it. I am the type of person that will eat most anything if I like the taste, from tongue to tail and don't let my brain get hung up on what it is. Squirrel...

    Venison Bologna Qview

I found some deer burger in the bottom of the frezer that had a couple years on it and thought I would make a few links of bologna. Used 10 lbs deer and 2 lbs pork sausage and a Lems backwoods mix and added some dried jalapeno pepper. I ran all the burger through the grinder with a 1/8 plate...

    Boneless venison ham, with q-view

VERY nice !!!!  I have done several venison hams and the turned out ok but not as juicy looking as yours. Never rapped in bacon but rubbed lard on the outside as they smoked. I use home made lard for just about everything and I think the lard needle would be the cats a$$ for them. I have to get...

    need some new ideas

I have injected with sugar cure just like a pork ham....smoked low and slow and pull at 140 to 145 because they dry out easy, then slice thin for sandwiches.  Have also injected with 50/50 sweet baby rays and apple juice and cover with a few pieces of bacon.  For the most part I slice mine for...

    Pulled squirrel samies Qview

Thanks guys....I start of at 140 and don't turn it on until I load the squirrel.  The heat from being in the pressure cooker helps bring it up to temp. I put my chips in right away and check every 1/2 hour or so...bump the temp up 10 degrees if it has stopped heating. I usually end up at 160...

I soak in a tender quick brine for a couple of days , rinse and throw on some pepper, onions, crushed corriander and this time added a few jap.peppers and put in my pressure cooker for...
