Pork Butts in new Double Barrel UDS w/Qview

Tried out my new toy, and it worked great. Held temp with very little adjustment for the 10 hour cook.

New Barrel in a Barrel UDS

RW Willy, it took more then a couple of beers to make it. Here is the inner barrel that I used. The outer is a standard 55 gal.

New Barrel in a Barrel UDS

I thought it would be better insulated, and hold temp better on cold windy days. Plus with the other barrel it gave me more heighth, and the weber lid fit perfect.

New Barrel in a Barrel UDS

I found two barrels that I could fit together for a double barrel UDS. This is what I came up with. I think it came out pretty good. I will try it out with a couple of 7 pound pork butts tomorrow. You can use two racks or hang the meat like chicken halves or ribs. You should be able to hang...

    Christmas Brisket

Thanks everyone for the compliments, and Bbq Bubba you are right on, it is one 2" intake and a 3" exhaust. I keep the exhaust open and the the intake open qrt. to half way. Held temp like a champ while smoking the brisket.

    Christmas Brisket

MossyMo, There is a lot of welding in the style of UDS that I make, but you can make them with a little bit of welding or none at all. You can drill holes for the intake and exhaust then use electrical knockout plugs to regulate intake air. You can also use stainless steel bolts to hold the...

    Christmas Brisket

The brisket was done in time for dinner, and everyone enjoyed it. I thought it came out pretty good for my first brisket. It especially made good Sammies the next day.

    Christmas Brisket

This is the other one I built. It came out pretty good for a $5.00 food grade drum, you can use the rods to hang ribs, and 1/2 chickens or use a grill for your other meats. After welded the stack on the lid it warped a little, so I added the angle iron frame to stiffen it up. It closes real good...

    Christmas Brisket

Merry Christmas everyone, I put on a 12lb. brisket at 4:30 this morning, hopefully it will be done in time for dinner. UDS's seem to cook quicker so I think I will be okay. Has been on 2 hours and the temp is holding around 220. This was my first UDS that I built, and I gave to a friend. I had...

    What's your occupation?

Right now I'm unemployed , My Christmas bonus from Johns Manville was to be among 62 employees layed off three days before Christmas. I will be starting my new job at a local Pest Control Company on Jan 2nd . Hopefully I will be doing good enough that if they call me back I won't have to go.

Chicken, and turkey wings in the barrel

Yes, I mostly use the stainless steel hooks. I have only used the cooking grid to do a whole turkey. You pull the plugs that are about 9" below the top. Then put in two rebar rods to hold the cooking grid. I can fit in more meat using the hooks then with one grid, plus you don't need to turn the...

Chicken, and turkey wings in the barrel

It's the fire pan, made from an old disc blade. The bottom of the barrel is cut out, and after the coals are ready you set the barrel over them.

Chicken, and turkey wings in the barrel

Cooked up some chicken halfs, turkey wings, and also some pork ribs in my barrel last night. (Not sure what section I should have posted this) This style barrel is a cross between a UDS and a bbq grill, a little too hot to call a smoker. It has worked great with pork ribs, tri-tip, chickens and...
