As with a lot of food safety issues, this one appears to have a lot of variables. The probability of risk to humans rises when all the variable occur at the right time in the correct sequence. Immune compromised or hypersensitive individuals complicate the equation even further.
I don't...
Welcome to the forum.
It sounds like you have chosen some good building blocks for your smoker.
What is the interior of the Welbilt constructed off, metal or plastic?
Many consumer grade frigs have plastic interiors, and from a safety standpoint, I would not recommend any plastic interior ...
If the unit with the ammonia system still has a charge in it, I would proceed with caution. Ammonia can can cause severe chemical burns to skin, mucas membranes, and any moist tissue, like eyes.
If you still decide to open up the system, do some research or get some qualified help. It can be...
Your finished smoker looks great.
How many pounds of meat can you do in a single batch?
Does the 1550 watt element hold the temp set point well with a full load of meat?
I envy your sheet metal fabricating skills.
Here's a parts list for the electrical and some of the mechanical parts.
I have a schematic and will try to get it scanned and posted.

Wow. Nice photographic layout. Wish I could have been there to assist with the sampling. Thats the first time I have heard of pork-strami?
My pastrimi experience has been limited to venison, but I can say the outcome has always been positive. One of my favorite go-to recipes.
I have the same speed issue from two different computers on two different networks.
Both locations are broadband connections, I am using XP SP3 and IE on both. I don't experience any latency issues with other web sites, just SMF.
I guess that's why I find it odd.
Does anyone else have issues with their browser taking a long time to load content from SMF? I really enjoy the site, it's just time consuming. What am I doing wrong?
Some PID controllers also use a temperature sensor called and RTD. The purpose and function is the same as a thermocouple though, just a different type of technology.
Often the sensor will have a small tag on the cable or sensor that identifies what type it is (J, K, etc).
Does your sensor...
I am envisioning 2 or 3 electric oven elements mounted in your barrel with some mean of controlling the temperature. It would be nice to see the electric one you have pictured in action... to get a feel for the heat intensity.
Of course, If you chose to down size the roast to something smaller...
This smoker is vented out the top, and yes, it is connected to my furnace flue stack. Just using flexible 4" dryer vent for the connection. I think the good draw on the stack helps manage any excess smoke issues inside the house. I had some reservations about creosote build-up but so far it has...
This smoker started out life as a hospital blanket warmer. I figured it was a good candidate for a smoker since it was all stainless construction and was well insulated with dense fiber glass panels.
The original analog controls and heat elements were undersized for a smoker, so I replaced them...
+1 on leaving the insulation alone.
The only area of concern I would have would be any foam insulation in close proximity to where your heating elements are mounted. It sounds like that cabinet should be the basis of a fine smoker.
