From reading the label, it looks like your pork is fully cured with salt, dextrose and sodium nitrite.
You could smoke it just as it is, or add some seasoning of your choice.
Agree, it is frustrating when they basically say "sorry, we don't want your business.
It doesn't sound like cost is your main concern, but when you start splitting off loads like baseboard heat and other selected loads for the generator, you are potentially looking at significant labor and...
Are those kits for NG or gasoline fueled generators? Re-jetting carburetors for gasoline engine at higher elevations is a common practice.
Not aware of such a thing for NG fueled engines? Carburetors on NG engines don't use the jets. They are basically just air and fuel mixing chambers...
That looks wonderful.
I was in a similar situation after an Alaskan trip several years ago, and was looking for new ways to prepare salmon.
I found the silvers make a very good cured, cold smoked lox. Well worth your effort if you have never tried it.
I did some beef ribs recently and wrapped them in foil after a 3 hours of smoke. They are not exactly a moist cut of meat to begin with and a lengthy cook will dry them out if they are out in the open and no other mop or moisture is added during an open cook.
I was happy with how they turned...
Most home units don't operate enough. For that reason, they are set to exercise periodically. If there is a problem with the unit starting, you don't want to find out about it when the power goes out.
I think I would want to rule out fuel issues before making a jump to a new generator, since you might have ongoing fuel problems with a new unit.
Dark color when changing the oil is less of a concern than a unit that is using significant oil between changes or has major oil/fluid leaks.
The demand regulator output runs at a negative pressure, a vacuum. They are factory preset, and I am not aware of any user adjustments on them.
Did you ever find an hour meter on this unit? Really curious how much actual use it has seen.
Since it runs on natural gas, you can illuminate fuel filters and other things associated with liquid fuels.
I do agree that using short squirts of starting fluid to verify that it will start and run briefly has merit. This would isolate it down to being a fuel issue or something else.
Based...
After vacuum sealing your biltong, you may want to refrigerate or freeze it.
Most curing, drying, and smoking preservation methods don't inhibit mold growth much.
Refrigeration will slow down mold growth and freezing stops it.
With most equipment like generators I give more weight to the run-time hours and less to the age. If the hours are low, it may be premature to think about replacing it, unless there are serious underlying mechanical issues.
If the service tech can't figure it our, maybe sit down with him and...
That would be an fantastic door. Not insulated, but considering the size, its not a huge heat loss.
Love watching that guy cut and shape everything with an angle grinder and cutoff wheel. What an artist.
The OP could do a basic, but fully functional version of this one.
When I taste fennel seed and star anise, I pick up on the familiar black licorice flavor in both.
I think you could make a passable Italian sausage using either, but I suspect fennel is the more traditional seasoning.
Is it a walk-in smoker or a chamber/cabinet design?
As far as R-value of the walls, the 1 inch ceramic insulation is decent but neither lime stone or firebrick have much R value at all.
The firebrick might be counterproductive in that the thermal mass will absorb a lot of heat on startup which...
What are you planning to use for a heat source and where will it be in proximity to the doors and walls. Also, what is the maximum temperature you expect to see in the smoke house?
From your description of the walls, it sounds like it could stand up to temperatures that far exceed anything you...
These knives with the replaceable inserts look like they have a lot going for them.
One concern I have is the physical robustness for tougher jobs where downward pressure is required to go through ligaments or tendons of a deer joint or similar task.
Do you have any reservations about using...
I am a retired industrial process control guy and E-tech, although I was in field work and not the design side of the house.
I have build a few PID based control systems for electric smoker temp control and brewing system temperature control. I have largely used off the shelf solutions, but...
