I have had that issue.. That's just the downside of this thermometer in my opinion.
I have a cheaper Weber as well and I get every bit of 100 ft., and what's nice about it is it beeps when it loses the signal from the base.
The et-73 gives you no indication when it has lost the signal.
I have one and haven't had any issues. The probe has stayed true, and the range is as advertised.
I also have an et-73 and the range on the Weber blows it away..
I know the temp in the middle of my drum is about 50 degrees higher than it reads on my dial thermo...
So if your drum's anything like mine, you were cooking at 300.
I try to keep my dial at around 180-200, but rely on the et-73 for the true temp..

I have a cover with a wing nut over my exhaust, and the same over my intake, and after a cook I can close them both and the coals will die almost immediately..
With what you described, I doubt that it would hold those temps for a prolonged period of time..
With a separate intake and exhaust...
Received my et-73 from Amazon today.. People talk about the range deficiency with these, but I'll just say that from 50-60 feet, which is all I need, It doesn't seem to be an issue out of the box.. Love the dual probe feature! My Weber is my back-up now..
It's around, you just haven't noticed.. I've been buying it forever and I used to live near you in Oceanside..
