Those look great Al - coincidentally I just found the hens at the local Grocery outlet. None of my regular haunts carry the birds. Naturally I purchased a couple for about $2.50 each, and they are in the freezer as I await the perfect time to make them. I think I'll try your method.

The burgers looks most excellent. These days I never purchase ground meat, but prefer to buy good quality meats to grind my own. It always results in burgers that the family and friends that think are spectacular.
It tended to go out when I put it on the left side. I'm thinking the added air flow across the burning pellets kept them lit. I'm also sure smoke went out the chimney, but enough remained to add flavor to the meat - there appears to be more smoke produced than went out the chimney.
A bit strange here as well - rained during Father's Day, and it has been cold enough to wear long sleeve shirts and pants rather than tank top/shorts we usually wear at this time of the year. Funny thing it was hot and sunny a month ago, also unusual.

I've never thought of removing that connective tissue and have not noticed anything chewy. However, my wife tells me that I'm often crude, rude, and socially unacceptable. :D
