    Need Brisket Recipe

Kosher salt and pepper are great brisket rubs. I love the beef flavor and brisket has its own strong natural flavors. I wouldn't worry too much about the rub...

bbq pork vs NC style vinegar

Sweet Baby Ray's is what the people around here like when they don't like the vinegar. It's good store-bought "traditional" style barbecue sauce and I like it more than any of the store-bought sauces. You could also try crazy horse's mustard sauce or some of the KC recipes that are around...

    rib rub?

Give the store-bought a try. It's not "yours", but it can be good. I'm also a fan of the Durkees Chicken/Rib rub, but I can't find it anymore. I'll have to start working on my own rib rub now. BTW, I just smoked some BB ribs Friday night (didn't foil them, so will reheat in the crockpot with...

    Overnight smoke

There is no factual condition known as too much bark. Send it to me if you can't sell it to your wife! :-)

    Baby back ribs...

So I couldn't find where to post the ABTs, so I'll put them here. I took the anaheim chilis, mixed up some cream cheese, a few slices of a fatty from the freezer and some shredded sharp cheddar. I cored out the peppers (i.e. a canoe), smeared in the stuffing and wrapped in bacon. I smoked...

    Baby back ribs...

Reading the other day about baby backs had me thinking of them. Going to Safeway and finding them for 1.99/lb made this an easy day to plan out. My daughter had sports early this afternoon, so I didn't have much time. The alternate plan is the gas grill with a perforated smoker box on the...

    Meat Overdose

Good job on that! I'm envious. Send some my way so you can have some room for pork! Let's go Caps!

    Water Pan "Flavors"

I think yes, it's a waste. I stopped using liquid in my pan, instead going to the piedmont water pan method. No fuss no muss, no water to babysit and it has only made it easier to get my temps to the proper level.

    Dry, stiff meat

seems like it should have evened out when you foiled and finished. What was your oven temp? I think many only cook the briskets to 200 vs. 210+. Let that sucker sit for a bit after it's done to make sure everything redistributes. In some ways though, you hit the jackpot. A dried up brisket...

    Prime Rib

If I were to smoke prime rib, I might smoke for a while to get some flavor then finish it on the grill. Texture is pretty important to me on that wonderful cut of meat!

    Monster ribs

I just did these a couple weeks ago and didn't trim them much. I tried to remove the membrane from them, but they have multiple layers it seemed. That hardened up during the smoke, but the meat was tender enough that you could just separate the meat from the membrane. Keep an eye on the fire...

    Dinosaur Ribs

All done! I didn't get to eat them until after 5, so they sat for a while, but I think they turned out pretty well. My wife made me sauce them which I think was ok, but I left a couple ribs dry which I preferred. They were very tender albeit a little difficult to navigate. There seemed to be...

    Dinosaur Ribs

No. I didn't plan to, but I also figured they'd take 4-5 hours. Not sure if it's good or bad that they're cooking so quickly... I took some off, but left the others on. I've got those that are off in a cooler for a few minutes then will see what's up with them. Chris, how long did you cook...

    Dinosaur Ribs

Thanks. I don't see beef back ribs on there. I'm getting around 200 right now so I think I'm going to pull them and see if they're done. I don't want them dry. I may cooler them until my wife gets home. If they're done, they cooked a lot faster than I expected....

    Dinosaur Ribs

I didn't take any pics 'cause I figured you'd all seen them... doh. They are big beef ribs. They're cooking pretty fast. I'm going to research to see if I can find guidance on what meat temp I should go for... I looked for pictures online, but am coming up empty. Here's a pic to show you...

    First Pulled Pork today

I stopped using water in the pan (piedmont water pan) and it's been much more pleasant since. Alot less cleanup and management during the smoke...

    Dinosaur Ribs

Got some dinosaur ribs at a renovation closeout at our local safeway. I'm smoking them over some mesquite smoke today. These things are monstrous, so I hope they turn out ok. I'm hoping I don't dry them out. They seem to have a magnificent amount of meat on them. I plan to make stock out of...

    Good eats tonight

I got some of those beef ribs for $1/lb at half price here locally. I'm going to smoke them Saturday night or Sunday late morning. I hope they turn out ok. I"ve never done these and they're huge!!!
