Where to begin... I like more porters and dark beers with my smoked foods. The Sam Adams Honey Porter is pretty good. I second the Young's Double Choc Stout as well. Saranac makes a fantastic caramel porter as part of their 12 beers of Christmas. I buy the 12 pack just for that beer. They...
I always do a pot of soup, but one other favorite which we had tonight is turkey salad sandwiches. You could also do hot turkey sandwiches with gravy on top and we like to do quesadillas with whatever leftover meat we have.
That stinks. (literally and figuratively! :-)) I wonder if they used a nasty brine?
I'm just all about feedback. If you're making crap, I'm going to tell you! :-D Was your bird pretty good?
To be completely fair, you might find out who the person was and tell them what you encountered. He/she may have had a bad bird or something and might want to know for safety reasons.
Glad you had the spare! Hopefully noone at the gross one.
I agree with bacon. I can't wait for a tenderloin this year. Give it a little marinade, then wrap in bacon and smoke till it's pretty firm. (I don't measure temps so much on beef and venison)
Use the cherry.... because that's what I want to use for my Christmas bird and I"d love to hear how well it goes! :-) I've used pear on poultry in the past and it's good...
Great color! You guys are killing me! My wife said conventional turkey for T-day, but has given me the green light for a smoked turkey for Christmas after seeing your pics. I"ll be busy. I'll have a ham to stuff on Christmas eve and a turkey to smoke on Christmas day! I couldn't have a...
GSG, I'm having a hard time picturing your proposal? I've been making my ABTs lately with anaheim chilis, stuffed with a smoked fatty, cream cheese and sharp cheddar, wrapped in bacon. How would you wrap an abt in a fatty?
If it slows too much, I say smoke for a few hours, then finish in the oven. It'll turn out great. I smoked a brined turkey for work last year and it was a hit. It just sucked smoking a turkey all night, then taking it to work the next morning at 530!
If he's getting it tomorrow, I'd just put it in heavy duty foil whole. He can throw it in the oven in the foil to heat it up, then slice it. Just don't lose any of the juice.
