    Maryland Fatties!

there's nothing better than anything wrapped in bacon and smoked. Looks great! I'd probably eat a turd if you wrapped it in bacon and smoked it. (I hope I never learn if I really mean that...)

    Maryland Fatties!

Sounds good. I love cooking with cherry because it smells so good! Do you have trouble with the wood flaming up when you put the chunks directly on the coals like that?

    spare rib trimmings?

ok, that does it. Now I'm going to do some spares tomorrow. I always have tough spares, so am hoping this time will be better!

Bottom Round Roast - gotta try this

This may sound nasty, but this is the fourth day we've eaten this. Two days of sandwiches, one day of slices with au jus as gravy with sides and tonight with fried potatoes with the meat topped with sauteed onions, mushrooms, garlic, etc. My wife has loved every time we've eaten this!

Bottom Round Roast - gotta try this

I keep seeing all these posts about sammiches, so had to give it a shot. I got a bottom round at the store on sale and started to marinate it Friday in a bourbon, soy sauce type marinade. I rubbed it with coffee, salt, pepper, garlic, onion and chili powder. Smoked over cherry and hickory for...

Smoked Italian Beef Sandwiches and Beef Rib Soup

I think that will be part of my weekend plans. I have one of those in my fridge right now. I was thinking of smoking it and using half for sammies and half for a pot of chili.

    Hello from Maryland

Sounds nice. I need to come by and sample! If you get a good source for wood, let me know. I've come across some cherry, but for some reason, can't seem to get any "free" oak which is crazy around here... Welcome!

Game Day Brisket (screwed up the smokie okie)

Just getting to update this. I didn't get any shots of the brisket, but here are a couple from the small chuck that I smoked! It was pretty good, but I dried it out a bit. It will make some killer quesadillas though! BTW, no pics of the brisket as the day got too complex and I had to serve...

    With grain Vs. across

You can make boiling an egg as difficult as you want, with measuring temps when adding the egg, the exact amount of time to boil without overcooking the yolk, etc. I say try cutting both ways and see which you like better. If neither, than cut it however is most fun to you! Rich, I'm looking...

Game Day Brisket (screwed up the smokie okie)

Yup. That's what I needed. I imagine you could use a chimney of your coals when they're flaming and just move the meat around to get coverage. Any ideas on how to keep this thing warm?

Game Day Brisket (screwed up the smokie okie)

I hear you Rich. I got home too late to set aside some of my walnut for the firepit. The dew/frost wet it so that there was too wet to burn hot! That would have been ideal. By the way, I've officially hit 200 and have to wait until 6 pm to eat. I've got it in the oven on the "keep warm"...

Game Day Brisket (screwed up the smokie okie)

I tried to sear my brisket the smokie okie way, but it seems that I did it wrong. I didn't get the nice bark like in the pictures that I've seen. I guess my grill doesn't get as hot as a wood fire. I'll try it in the fire pit next time and see how it goes. I also didn't have an aluminum pan...
