I hope it all comes out ok. Honestly, I hoped to have some of the beef for chili during football/hockey season, so if it's tough, that's ok with me! I didn't get any pictures this morning in my haste, but yes indeed, I remember the rules. :-) (see below) Oh, you'll notice I had a couple...
It's been a long time since I posted anything on here, so I wanted to get something going.
I've never cooked, nor seen a bottom round flat, but it was only 1.59/lb, so I figured I'd give it a shot! This is a big hunk of beef (10 lbs), so I'm planning a long smoke. I have 23 pounds of meat...
I have this same smoker. I drilled holes in the coal pan and bought a small grate to raise the coals off the bottom which helps the fire burn hotter and not choke out.
I also don't use water in the pan, but just cover that pan with foil to help it serve as a heat sink. It works nicely and...

This is the SMF of home brew. Use it as a resource to get things started.
I use one fermentation vessel, just leaving the brew down for 4 weeks or so. Essentially the same as racking to a secondary and produces nice clear beer.
Are you brewing your own beer, or buying kegs? Doesn't look like a corny, I figure you are buying your favorite brew in a keg at the liquor store. So, what's in the keg!? I have a beer fridge, but haven't made the change to kegging yet.
Sorry, just read the other posts and see that you're...
Looks great. I tried pablanos last weekend and they were GREAT! They were big enough that they could be halved and big enough to hold a hot of stuffing. Perfect size for a piece of bacon to hold it all together. Not very hot, but deeelicious.
Anaheim chiles are another safe alternative with...
Looks good! I should have come over. I'm just around the corner! I made some smoked pablano ABTs for the tailgate at the Dover race. I used goose breakfast sausage, some sauteed onions, garlic and a mix of cream cheese and cheddar.
I am an extract brewer. I might move to all grain eventually, but don't want to make the investment just yet. Best resource I've found for brewing other than my LHBS homebrewtalk.com . Lots of recipes and a good beginner section. I love beer! (although I hate those wheat beers!)
So, you didn't say what style beer that is? I've been planning to build a kegerator, just waiting for a free fridge to fall in my lap... Brewing a simcoe/amarillo IPA this month. Can't wait!
Great looking bark. Looks like maybe you didn't foil the whole roast? I sometimes finish mine in an aluminum pan to hold the juice, but so that the top part maintains a nice bark.
