It looks like I have a problem...

As I was reading along, believe it or not, I was wondering about spiderwebs.  I have had that happen to me with my GOSM.  I bet you store your smoker outdoors.  When I had it happen, the flame never looked right until I cleaned everything out.

    Cold Cut Video

Oh wow!  They were fun to watch, especially if you've ever made your own sausage!

    Q-View Ribs

When I use my GOSM, I use a bar clamp across the top, holding the door in.  That stops most of the smoke leaks on mine.

    cabella's mixer

I have that mixer and I have used it once for about 10 -12 pounds of bratwurst.  It did not ball up and it sure made the spice mixing aot easier before the second grind.

    Ghost Pepper Slim Jims

I was sittin' here, watchin'.  Saw Ghost Pepper Sea Salt, and my brain chimed into the conversation with "Be Afraid...Be VERY Afraid!." (And I like spice!  We buy our Tabasco in the industrial size bottle at least three times a year!)

    Cautionary tale regarding sausage casings.

When I was a kid, we would use a strong stick of some kind, when the disposer jammed (Broomstick or hockey stick or something like that).  We'd stick it down from the top and rotate the grinder backwards. That generally worked back then and I have used a similar idea a couple of times in the...

    AMNPS "Burn time"

Yep, 1 smoke at 225 (ribs) and another at 240-250 (pulled pork).  Thanks, Todd and I will start playing with intake and leave exhaust wide open.  6 hours is much better than what I had before, but I'm looking for long enough so that I can make an overnight smoke with full smoke all night.

    AMNPS "Burn time"

Please note that this is NOT a complaint! I have been really grateful for the recent posts about people using the AMNPS.  I have seen comments from several people indicating that they got burn times which were significantly less than the 10 - 11 hours I had seen earlier.  I have been getting...

Forum Not Posting When Using Firefox

I agree with Todd. I use Firefox and I got the same message when I tried to change font size. (Did when I typed this response, too.) I haven't tried to load any pictures recently

My Maverick ET-732 BBQ probe freaked out

My meat probe just went south, too. I put both old probes (old because I just received my 6 foot ones) in to test my new MES 40 as I was seasoning it. The meet probe read about 240 at room temperature. I have not immersed them. I'm OK because I have the long set, now. but I thought I would...

    It just arrived last night....

I already have one. I could swear I saw a recent thread where Todd showed pictures of how best to position one in an MES 40, but I haven't been able to find it. I left him a PM, but if you can remember the thread and provide me link, I would appreciate it.

    It just arrived last night....

I was talking with my bride about my smoker. I mentioned that I wanted to try overnight smokes for big pork butts and to experiment with brisket (since I have never done these). When I was a boy, we had a house fire and I have never felt comfortable leaving an open fire overnight and since I...
