    Smoked turkey = success

    I actually basted the turkey multiple times with a 50/50 EVOO/butter sauce with some Tony C's. When I threw it in the oven, it was crackling and sizzling, so I figured it was crispy.. didn't happen, though. Doesn't matter too much, though, the meat was delicious :D

    I will probably pick one up if they go on sale for the holidays. I just spent $330 on my smoker, throwing in another $50+ s/h is probably not a wise investment at this point :D Todd does have excellent CS, though, so I'd like to support him in the future.

    Yeah, I see the convenience of it. The MES makes it so simple to load chips though, I don't mind having to go out every half hour to dump a few chips in. And definitely +1 for Todd's CS, I'm very impressed with it.

    Rib roast for my wife's birthday, with Q-view and a couple questions.

    I follow Alton Brown's way of aging prime rib. I put it in a big plastic bowl w/ a lid and punch a few holes in it for airflow. Stack a few papertowels under the prime rib and change them out every day. Let it sit for a few days. It's unbelievable how much it kicks up the flavor.

    I'm smoking a turkey for Tgiving tomorrow. I have a huge problem of way over-smoking things to the point of bitterness. I'll be doing a 14 lb turkey at probably 250*. How many of those ~6-7 hours should I be smoking, and how much of it should just be heat? Thanks fellas

    MES owners - question about your door seal

    Thanks, that's what I needed to know. I tried adjusting it, even to the point where it was so tight that I couldn't latch it. The seal is just bent at the top, and no matter how close I mash the two together, it refuses to seal.

    I would strongly suggest you brine it. It's unbelievable how much juicier and tastier poultry tastes when you brine it.
