When I nuke my bacon I use a large paper plate with paper towles in between layers. I do 2 layers at a time and nuke for 1 1/2 minutes... I use thick cut bacon from costco... Hope this helps...
Your recipe is almost the same as mine except I smoke my chicken (without brine) first and cut up into bite size pieces... It's been a family tradition for many years to make gumbo the day after Thanksgiving using leftover turkey...

i have a mes and just smoked some st. louis style spares yesterday... i have been experimenting with different time as to the 3-2-1... i have never had any bad ribs in cluding baby backs on any of my smokes... yesterday was the best ribs i have ever done and i did 4 1/2- 1/2-1... i don't like...

Rings look great. I have never smoked mine before i fry them but I do use a similar batter. The only difference is I add a teaspoon of paprika and 1/4 cup of cornmeal for a little crunch...

I just smoked 2 cornish game hens the other day. My first. I used my temperature probe in the breast but there is not enough meat to get an accurate reading. I smoked them for 2 hours at 275 and they turned out great. I also brined them over night. Do them just like a chicken...
I use sheeps casings 20-22mm and they work just fine...

I love the split door mod. Was it very difficult to do? My son used to work for a steel fabricator and I'm sure he can get it done for me... Great job...
Good luck on that. I spent my summers on the coast in Lakeside on North Tenmile lake. We are there for 3 months and mostly fish the lake for bass, perch and trout. We have some friends that return every year just for the salmon fishing and always get some from them...
