Where can I buy Encapsulated Citric Acid (ECA)

Try any local country stores that are owned by amish or Mennonites. If they don't carry it, chances are they know who does. Or talk to a local butcher. He might sell you some.

    First time smoke

First time using my enterprise stuffer today and first smoke in my smoker. Got some venison/pork snack sticks going with my own spice mix stuffed in 17mm cologen casings. So far everything is going good. Been in about 2 hours with pecan pellet smoke. Smoker temp @140°, IT @120°. Long way to go yet.

I'm sure guys with more experience will jump in soon to answer. In the mean time, it looks to me as though you didn't have enough pellets packed in the tray.

    Warped Lid?

Sounds to me as if the hinge area got bent. If it bent that easy from the lid falling I would think it could easily be bent back into position.

    Vacmaster pro350 issue

Can you post a picture of what one looks like that actually is for the unit I have? I searched the web and can't find one that's for the pro350. All I can find for it is a maintenance kit.

    Vacmaster pro350 issue

Thanks guys. As far as I know, the sealing tape is just there to keep the plastic bag from touching the metal heat strip. I also tried placing the bag different ways. Still the same. The metal sealing strip doesn't even get warm. I opened the unit up and tested the sulinoids, micro switch, and...

    Vacmaster pro350 issue

My vacmaster pro350 doesn't seal. Just wondering of anyone on here ever had that same problem and what you did to fixed it? It runs and everything seems to work. It has good vacuum. No error codes. It just doesn't heat the seal bar. I've tested a few things on it but so far I found nothing. I...

    Seasoning new smoker

Both got the job done. I only used the cooking spray on the mesh shelves. Bacon fat everywhere else. Both worked but I liked the fat the best. The spray was messy.

Also I used high temperature wires for the wire that go to the heating element. Got them from a junk kitchen stove. If you go to www.auberins and look thru their website you can see different wiring diagrams. That's what I did and just tweaked it a bit for my needs. Hope this helps you.
