    To get back on track... Kheper, I've had great luck steaming pork butts lately. I do it in my smoker. I've not tried a pressure steamer... I bet it makes the meat wonderfully tender and moist!  Thanks for the info!!

    Thanks so  much Raptor and Meat.   Thank you Rob! The peppers are medium hot... A friend in Missouri sent a bag of dried ones to me.  I like to throw them in the brine for an extra kick. :) I make a chili infused oil with them too, it's great on a number of things. Keith thanks buddy! :)...

    Thank you Michael! I am still getting used to the cooker but I like it so far. The hot coal rack can be lowered to a "smoke" setting or raised to the "bake" level or up to "sear" level. So far I haven't burnt anything. lol  Keep your fingers crossed for me though!

    Great looking smokers! Automotive high heat paint works great. It's expensive but it works great for detail work.

    I know I make these a lot.. this is my first try on the Hasty Bake. I brined the game hens in a mixture of kosher salt, turbinado sugar, pepper corns, onion, garlic, bay leaves and a kaskaskian pepper (from Ashmont, thanks again :)) Buttered the birds and sprinkled with Big Poppa's Little...
