THAI SAUSAGE---another off the to-do list

Really great looking sausage and a real variety to what you can't find in the store.   What is the cure that I saw mentioned?  Is this some kind of preservative?  I ask since I am making sausage tonight and didn't have any plans to put any type of preservative or cure in the sausages.  I plan...

Ribs The Way I Like Them

Disco, you sound very experienced so any tips on how to remove the silver skin from the ribs.  I wrestle with this everytime and I am sure there has to be an easier way.  I see paper towel in your picture so I am thinking maybe you use that to grip the skin?  Any hints?  Thank you

So what do you plan on smoking for the Super Bowl ?

I think the temperature is suppose to be in the low teens so it may be hard to keep my grill regulated.  My plan is to smoke some Philadelphia Cheese Steak sausages that I will be making tonight.  We will have this with a Chilean Malbec that I made back in 2013.... Looking forward to it and I...

    Philly cheese steak brats

I'll have to go the dedicated stuffer once I am hooked but for now, I have the kitchen aid attachment(s) and I have watched a few videos on youtube using these specific attachments.  They sure make it look easy  I plan to do these on Friday so I will have pics then.  I bought casings yesterday...

    Philly cheese steak brats

Cfarmer, nice job and they look great! Do you think I might be able to use this option for a stuffer: http://www.walmart.com/ip/KitchenAid-Sausage-Stuffer-Kit/8065414 I have the kitchen aid so it seems like an inexpensive way to give this a try

    What's the Best Fuel Source?

Only one great way to start the charcoal and that is with the weber chimney. After the ignition, I use the minion method which is where the briquettes work best for me

    What's the Best Fuel Source?

For low and slow cooks, i find it more predictable and manageable when I use briquettes. They are uniform in size and burn more consistently for me. I use a weber kettle but I think the methods to charcoal are similar with a WSM It will be interesting to see what other advice is posted

A Bear From Log to Finish (Picture Heavy)

Came across this and I enjoyed reading about how you came to be "Bear".  The sculptures are incredible and a piece of art.  I have to think they take weeks to make and that is the reason for the $$$.  Do you sell these anywhere near the Poconos?  I live about 2 hours away in Downingtown, PA.  ...

POST CHRISTMAS PRIME RIB (What to do with it?)

Prime Rib soup?  That sounds excellent #Foamheart!  I see that Harrigans uses Bovril so the wife is out getting this along with the rest of the New Year's eve menu.  I am making this tonight and will report back but how can sour cream, PR, and mushroom soup be bad?  Add bread and it is 5...

POST CHRISTMAS PRIME RIB (What to do with it?)

I also grilled prime rib for Xmas.  The butcher likes to cut the bones out, remove the fat/silverskin, and then he ties the roast back up with the bones.  I visited him (Scooby) to go over what I wanted which was 2, 4 bone ribs since I prefer 2 smaller ones over a single large 8 bone rib.  I...
