    The Turkey is in. Using the water pan to cook some veggies and catch the drippings for gravy. So good. The snow is just starting to stick.

    The pastrami is on, the Turkey goes in an hour. It is 36 degrees outside with rain and wet snow mix.

    You could also try calling around to your local metal fab shops and steel suppliers and see if they have any scraps you could buy.

    Can't wait for some que view. It is a bit weird with then being wrapped. What is the temp in your smoker. Are you using a separate thermometer. Did it stall or just really slow down, if your smoker it's running cold the last few degrees take forever.

    The Turkey is having a nice relaxing soak in a brine bath, quart of apple cider, salt, sugar, sage, thyme, carrots, onion, celery water, and orange. I just rubbed up a couple more pastrami for this weekend also. I will definitely post some more on Sunday.
