    I use my own recipe for baked beans, that I thought of after making Dutch's. I take a can of Bush's Baked Beans, add one can of diced green chiles, some ketchup, or Jeff's BBQ sauce (if I have some ready). Then I add some turbinado sugar, some brisket juice, and maybe a jalapeno.

    Meowey, she says boil one dozen eggs. Then mix the yolks with 3-tbs mustard and 1-tbs mayo. Then add either 2-tbs relish or 2-tbs pickles chopped up. Mix everything then stuff the agg halves. Sprinkle with paprika.

    I agree, you should have place the firebox lower. Also, the exhaust stack should be on the opposite end of the firebox, coming out of the end, just below the cooking grate.

    Brisket I smoked yesterday

    Here is a couple of pics of the brisket I smoked yesterday. It was an 11-lb packer. I also made a batch of beans today, and the wife made devilled eggs. These are the only pics I got, sorry. I barely got these. Didn'y get any pics of the ABTs, they were good though.

    Brisket cooking time

    When we want brisket, I smoke it on Saturday, and we eat it on Sunday...and Monday. Monday I take all that is left to work for my crew to eat with me. I smoked one yesterday, I pulled the point while my wife sliced the flat- at 3:00 a.m. It is in the oven with some beans warming back up.

    Go to the gallery and look at my pics. Look at the one I made. Any welding shop ought to be able to make you one pretty cheap. Mine measures 12" x8" and has 35 1" holes.

    Smokin' steaks

    I have smoked some ribeyes. They were very good. I sprinkled on some rub, and smoked them to 180°. They were fork tender, and flaked apart like fish does. Smoke ring was all the way thru the steaks. I plan on doing some more some day.

    ABT stuffing

    How does the mozzarella work out? Does it melt good? I usually use cheddar, colbyjack, or monterey jack for mine. I make some with cream cheese for the wife.
