    Help with company picnic

As I mentioned, people generally eat a lot more at these type of things, partly because "the company" is paying and they have a subconcsious thing about that in many cases. However, the best gauge is local experience. Did they have a picnic last year? What was served? How much? Did they run...

    Help?

Here's a guide... Generally, with the exception of the habanero/scotch bonnets, the pointier the pepper the hotter it is. Your local grocery looks like they probably can help you out.

    BBQ regret-rant about a lunch

You guys are just experiencing the BBQ part of my life since I got fairly dangerous in the kitchen. Every time I figure out a new recipe or cuisine, I see the same thing at restaurants with a very few exceptions. My conclusion based on these observations and having lived in various and...

    Geoduck Clams

Yes, I knew that, but it was the first pic I found on the fishing site. That day, they only got the horsenecks. 4th of July they got both. Horsenecks are longer, but the Geoducks have more girth.

    Geoduck Clams

Geoducks are very tasty clams. Just like the little clams, but a lot more meat to them. I have not gone digging for them myself, but I have some friends that do, including one that has mastered the method of digging them. Here's a pic of some of them from earlier this year:

    Kroger's superstore

misters all over the produce section with the thunder and lights. Started doing this in the Atlanta area Krogers about 10 years ago. First time I heard the cows and chickens was a pretty good WTF moment.

Help with King Kooker 34 inch Vertical

I am far from the expert on this, but the mass of the chicken is probably slowing down the cooking process significantly in that type of smoker. When I had an electric ECB I tried doing ribs at the same time as a pork shoulder and the ribs took much longer than they normally would.

Help? I Have Bugs, Knats, Fruit Flies W/QVIEW

Is that pic inside or outside? You need to figure out what they are before you know what to do about them. Gnats, fruit flies, and mosquitos are pretty easy to tell apart. I am guessing they are not mosquitoes as they would have been biting you. If they are fruit flies you should be able to...

Hello from the Santa Cruz, CA Hills..

Hi there and welcome. I am real close to you in Scotts Valley. You will be most likely driving by me on the way to Vasona. Like Dave says, 60 people is not that big a party to deal with. For 60 people you should not need more than 30 lbs of meat, which you should hopefully be able to do in...

An interesting toy for you outdoor open pit cooks

Well of course it's for show, but it should work well and be easier for some things than using a cast skillet since it doesn't have sides. I have a cast iron griddle that fits across two stove burners that would do almost the same. Granite would have the advantage of no rusting if you would be...

    Pastrami soak

Found this on another site and I think it describes well why there are so many different opinions and experiences here: TIP: The strength and flavor of the brine or corning liquid used on store-bought corned briskets vary greatly from brand to brand and pre-soaking in water is necessary to...

    BigWayne here

We have 3 chickens in the back yard BTW. About the only thing they don't eat is chicken poop. I have my fish cleaning station in the chicken pen so I don't have to clean up much afterward. Just rinse it all off to the ground and they do the rest.

Looking for a decent store baught sauce...

I have been using Stubb's since they came out with just the first original flavor. We like the spicy version as well. Mild didn't do it for us.

    Help with company picnic

General guidelines for meat quantities are 1/4 pound boneless meat per person. Picnics like this where the company pays people will eat 2 to 4 times that amount though, especially if it is tasty stuff. The grill facilities you are describing will be tough to manage if you are really trying to...

    Butchering Spare Ribs Question

I have never ever trimmed mine and I have been happy with them. That being said, I didn't much know any better or know what I was missing. I will trim up the next batch I do for comparison purposes.

ECB vertical smoker and Rib Racks

When I had an electric ECB, I used 2 of this type of rack for ribs: I could usually put 6 half racks per shelf that way for a total of 6 full racks of ribs in the smoker at a time. 4 inside the slots and a leaner on each side. Would have to rotate the leaners with the middle ones to get...

    Grill Pizza Stone?

This place uses the fibrament stone with a steel contraption over it. Looks like it works well. http://www.2stonepizzagrill.com/ I did some research and am thinking 18" unglazed tile will work well. I saw one writeup of using an 18" travertine tile. Travertine is pricey if you are doing...
