Well I can't really help with the MES questions, but I can offer some tips. 28lbs of butts will feed almost 50 people after cooking, you will have 14 to 16 lbs of meat. So at 1/3 lb per person = 42 to 48 servings. There may be leftovers.

Here are some basic recipes to start tinkering with. Find one or two that you like and start adding or subtracting different flavors that you like. I hope this helps.

16 tsp brown sugar
3 tsp kosher salt

3 tsp sweet paprika
½ tsp granulated garlic

Well 8 pounds is the precook weight, I am assuming. You will only clear 4 to 6 lbs of meat. So you will want to make two. Even more so if you have a few big eaters coming over.
