    I would smoke a pork butt first and that will take care some of the seasoning process. Pork butts are very forgiving.

    Smoked for 3 hours then wrapped in apple juice. The skin comes after it's done coking. Peel of or cut off.

    Lengua or beef tongue went on the wsm. Used lump and got temps up to 275-300. No water pan was used. Seasoned only with salt, pepper, onion and garlic powder. Some wosterchire. This was smoked for 6 hours. Plated and ready to eat. Thanks for looking Tony and Maribel

    Let's make ribs.... Seasoned with lamberts then added brown sugar. Used pecan wood for smoke The wrap... The usual but this time I used Louisiana hot sauce Done. Not over cooked but not under cooked. Let's eat. Thanks for stopping by Tony and Maribel
