    Awesome thread! I am going to be smoking for 75 for my wife's graduation party. All I have is my little Brinkmann electric though! I have a friend who has a GOSM and he is going to help as well. This thread has given me a lot of confidence! Thanks!

    I like the fact that the two chambers are separate. You could have a hotter smoke for poultry in one and a nice low smoke for cheese in the other. Kansas to Michigan is a bit of a drive though for me.

    That or drop the 40 to 70 on an electric Brinkmann. I like mine, it is the red gourmet version.

    Next time I am going to smoke a pork shoulder on the top rack, with beans (mostly drained) on the bottom rack. I can't imagine that all that pork juice won't make them awesome.

    Some spares that smoked for about 4 hours total. Also made some of Dutch's Wicked Baked Beans. I left out the jalepenos and the green pepper, but I don't think I missed anything. They are wonderful!

    I'll put some Qview out tonight, but the beans are on the ECB right now. I had to sample them. They are out of sight! Bit on the sweet side as I left out the pepper and the jalapenos. But I will fix that with some additional dry mustard. Great recipe Dutch! A real winner brother!

    I would say that we lost 90% of the pines in our neighborhood about 7 years ago. The guys who are really smart with trees said it was the beetle too. I cut mine down and replaced it with a silver maple.

    Keep the temp around 225 and your birds should be fine no matter which rack they reside on. Might consider putting foil over the wings so they don't burn.
