I had the exact same thing 3 weeks ago and ended up tossing the ribs out. The smell was so bad that the kids thought that the dog had gas!
I smoked some pulled pork last night and it had the same smell when it came out of the plastic. Not near as intense as the ribs though. It was good!
Go to a garage sale, or eBay or wherever and buy yourself a Ronco Showtime Rotisserie. Smoke the bird as usual, and then slap it on the spit and spin it until the skin is the desired crispiness!
I didn't have a problem with it burning. I am using a cheapo Brinkmann electric, so it struggles to reach 240. Burning isn't an issue with it. If you are using lump or sticks then you might think about foiling earlier if you see the bark getting too barky. Once it goes in foil though, expect...

I'm with Dutch, mustard and horseradish on butts is really good. The mustard cooks off but the horsey sticks around and gives the bark a little more twang. Nothing too intense, but more noticable than mustard.

I put Coke in the water pan when smoking poultry. Adds a nice flavor to the skin.
