We have a side of beef we have been working on. We're out of patties but have plenty of burger left. When I opened the deep freeze I realized we also have lots of Bambi that I need to eat up.

Decided to make up some burgers a couple days ago. Something spicy and full of flavor. The wife asked me what was in them?? EVERYTHING!! After I made them into patties I stuck the first few in the freezer to firm up before throwing on the grill. The burgers turned out AWESOME!!

This is my first time using the 2nd generation. I previously used the 1st gen MES40. I never had this problem with the last smoker.
I had oak and hickory chunks that I cut myself from my wood shop.
I gotta admit I've been thinking about and talking about pineapple in sausage ever since you posted it. Then I reread your post. Pizza sausage sounds awesome too!

that is the book I live by. I have found his "hot" recipes need more hot for my taste. he goes over everything you would possibly need to know.
I guess I should have read your avator better. I never would have guess a fellow Illinoisian was making gator sausage!
