    Decided to make up some burgers a couple days ago.  Something spicy and full of flavor.  The wife asked me what was in them??  EVERYTHING!!    After I made them into patties I stuck the first few in the freezer to firm up before throwing on the grill.  The burgers turned out AWESOME!! 2 pounds...

    This is my first time using the 2nd generation.  I previously used the 1st gen MES40.  I never had this problem with the last smoker. I had oak and hickory chunks that I cut myself from my wood shop.

    Great Sausage Recipes and Meat Curing by Rytek Kutas and Ben Kutas (1984) that is the book I live by.  I have found his "hot" recipes need more hot for my taste.  he goes over everything you would possibly need to know.
