First Smoke Right Now!! 13# Brisket

That's why I got a 13 pound brisket! Would "right-unders" be the opposite of "left-overs"??? With the brisket right-under my nose, I'll be sampling it for breakfast Sunday morning - maybe I'll have some fatties and eggs as well!!!

First Smoke Right Now!! 13# Brisket

The plan was to finish tomorrow sometime past midnight (2-3am), pack it in a cooler, and have it for Sunday lunch. I'll check the temp Sunday mornin when I get up and throw it in the oven on a low temp to keep it warm if need be. What do you guys/gals think?

    howdy y'all

Welcome!!! I too am new here. Been lurking around and absorbing as much as I can for the past two weeks. My smoker was delivered on Tuesday, and my first smoke will begin tomorrow! Learned almost everything I know 'bout smokin' right here on SMF! Took the e-course, asked a few questions, and...

First Smoke Right Now!! 13# Brisket

I used a jalapeno mustard on the brisket before applying the rub. I also made Dr. BBQ's Big-Time Barbecue Mop (figured I'd be consistent since I made his rub), using the same jalapeno mustard and a Samual Adam's Cherry Wheat that I got in a variety case the other day. I also got a dozen...

First Smoke Right Now!! 13# Brisket

Well tomorrow I'm gonna pop my cherry! I picked up a 13lb CAB Choice Grade Beef Brisket this afternoon. Trimmed it and applied Dr. BBQ's Big-Time Rub, wrapped it up and put it in the fridge. Plan on smokin it tomorrow with Hickory chunks along with some apple or cherry chips. VERY EXCITED...

    Maverick Smoker Thermometer

Mine came with the stand attached to the receiver. The on/off switch for the transmitter is in the battery compartment to protect it behind the sealed cover against moisture and such. Whatever you have attached to your transmitter, leave it on, turn the lock with a small screwdriver (Pic#1) and...

Where to buy GOSM big block

My GOSM shipped one day before amazon.com said it would be released (as per my above post), on February 9th. It arrived only four days later! No tax & no shipping costs. The box should have had wood (instead of cardboard) around it to protect the smoker's corners - one corner was slightly...

    GOSM Big Block

The smoker can easily be disassembled and placed back in the box with everything (including any build-up from use) inside the main unit. I couldn't wait to put it together & season it, despite the snow that's beginning to fall. Now I can't wait to smoke something and eat it!!!

    Basting: A Wasted Effort?

Ray Lampe, in his book Dr. BBQ's Big-Time Barbecue Cookbook, says of his Big-Time Barbecue Mop: "Use a metal bowl and keep it warm in the cooker while the meat cooks." I'm guessing that if you are using a spray bottle, there is no way to keep it warm in the cooker. Does anyone that doesn't...

    GOSM Big Block

It arrived almost three hours ago, and is being seasoned right now!!! Took an hour & a half to put her together. It is supposed to snow tonight and tomorrow, so I am not sure when I will pop my smokin' cherry! I would love to try something before the weekend, a beef brisket I think. I will also...

    Basting: A Wasted Effort?

I have never smoked before. I hope to smoke my first this weekend - a brisket me thinks! I have taken the e-course and read many threads on this site and anywhere else on the web that I can find. I just picked up a book I've had for several years called "The Complete Meat Cookbook" by Bruce...

Buying wood? Where/what/how much to buy?

Cabelas has 10lb bags of chunks (Alder, Apple, Maple, Hickory & Mesquite) for $8.99 plus shipping. The shipping is NOT based on weight, but instead on the order amount. 50lbs can be shipped for $7.75 for standard express 3-6 day delivery time. Bass Pro Shops has 10lb bags of Mesquite & Hickory...

Buying wood? Where/what/how much to buy?

Does the smoking-meat forum profit from sales made through this site? It would be great, especially because I purchased my GOSM last week through this site. But my smoker is coming directly from amazon.com with free shipping. The woods are coming from LB Barbecue Accessories & Distribution and...

Buying wood? Where/what/how much to buy?

Update: I found wood cheaper on Cabelas and BassPro Shops websites and was wondering if anyone had any experience with them. See the last post for more details. Original Post: I ordered a GOSM Big Block last week, and it is on it's way to my house as we speak! I already got my dual probe smoker...

    Maverick Smoker Thermometer

Received my Maverick ET-73 yesterday. Everything worked great. Instructions were simple, and setting the upper & lower smoker temps, as well as the meat temp, was quite easy (other than pressing each button 250+ times). Boiled water and the smoker probe read 211F and the meat probe read 213F...
