    propane useage

Anyone ever consider using a 100lb propane tank for a gas smoker or grill? Is it a ridiculous idea? THey sell empty tanks at Costco, but I have no idea where one could have it filled. I got 2 20lb tanks that'll probably suit me just fine. I was just wonderin...

    FINISHING SAUCE (for Pulled Pork)

Not only could I not find Tony Chachere's Creole Cajun Seasoning, but I could not find any chipotle ketchup that is used in TulsaJeff's smokey bbq sauce. I went to 5 supermarkets, but haven't checked out WalMart yet. I got a bottle of Emeril's Bayou Blast Essence and Cajun's Choice Creole...

    FINISHING SAUCE (for Pulled Pork)

Jeff, I picked up a pair of butts today and plan on smoking them on Saturday morning. I definitely want to try your finishing sauce after reading this thread. Never heard of Tony Chachere's Cajun Seasoning - can it be bought at many supermarkets? Could it be substituted with anything else...

    New guy to the forum

You're looking for a themastat, or a thermometer? I think you're looking for a thermometer - check out this thread. I got the Maverick ET-73 (dual probe - made for a smoker) and it worked great for me on my first smoke (a brisket). Purchased mine from partshelf.com. Good luck!

    hi from michigan

Welcome aboard! There is a wealth of information available on this site, and many great people that will assist you in any way they can. First thing I did was the 5-day smoking-basics ecourse. How much smoking experience do you have, and what kind of smoker are you using?

    Smoke Log

I found a different "smoke log" Saturday when bouncing around through many posts. Can't find the post with the Word document attached, but it was posted by SmokeMack (I remember cause I thanked him in my thread about my first smoke on Saturday). I can't upload it - says it's too big. I'll try...

    newbie

This is a thread on the Maverick Digital Thermometers. I ordered the Maverick ET-73 from partshelf.com - Regular price: $59.99, Sale price: $42.95 (it was $39.99 plus shipping of $8.40, two weeks ago when I ordered mine). It has dual probes (meat temp & smoker temp) and a remote receiver. They...

    first time and failed

Check out this thread about the Maverick Digital Thermometers. I did my first smoke on Saturday, and I think I would have been completely lost without it! I have some adjustments to make the next time I smoke a brisket, but knowing the cooking temperature and the meat temperature at all times...

First Smoke Right Now!! 13# Brisket

I'd call my first smoke a success! Not perfect, by any means, but successful nonetheless. It was very tender and flavorful. The skinny end of the flat was not as moist as I hoped. The point section was very juicy and mostly fell apart - I'll be having shredded beef sandwiches tomorrow for sure...

First Smoke Right Now!! 13# Brisket

Thanks Chad. Not gonna do the corn in the smoker - it's already de-husked from Costco. No problem. I already got my hands full anyway! The liquids from last night are still in there. A little leaked out, but I put an additional foil under it when I put it in the oven. If you make it to Spoons...

First Smoke Right Now!! 13# Brisket

Whipped up some of Dutch's Wicked Baked Beans, along with some ABTs that I stuffed with a combination of sausage, grated pecorino romano cheese, and soft cream cheese with chive & onion. Gonna smoke them this afternoon. Friends coming over around 3ish. Meat temp just fell to 139°, and it is...

First Smoke Right Now!! 13# Brisket

Well, it's morning here in NY. Almost 8am. Slept 7 hours, but it feels like I worked last night. The meat is still in the cooler, running at about 154° (again this thermometer is awesome - don't know how people can say bad things about them). Looking for recipes for baked beans, and was also...

    Hillbilly Spice Rack

Those McCormack spices are expensive compared to buying larger containers from say Costco or and maybe even BJ's or Sam's Club (not a member of these). I passed on getting some at Costco and stopped at a local supermarket closer to home, only to find the cost was very similar but the quantity I...
