    Sausage Maker hot sticks ??

I used some really good digital scales when measuring my vension snack sticks. It seemed that I only had to use a very small amount of the pink cure. I froze some jalapeno's in a ziplock bag before grinding them later and mixing with the meat and seasonings. I also made some with about 1...

    Brisket (plateau issue)

Happy Smoke Rings from Sedalia, MO. I just did my first Brisket and had to pull and foil it at 143 deg. Then after I got home; I put it in what turned out to be a 300 deg oven and took it to 199 deg internal temp. I couldn't tell about the plateau while eating it. So ??? Hope this helps.

    New Char-Griller

I have the Silver Smoker. The mods I made were to clean it at the car wash then it dried mostly on the way home in the trailer; securely strapped down. I used Aluminum foil to make a baffle and to extend the smoke stack the first couple of times to determine if I wanted to make those mods and...

    First Brisket Questions.

I just finished sampling my first brisket and I can safely say it worked out great. It was rainy at the farm yesterday and I had the brisket in the fridge rubbed with a local guy's rub and wrapped in Saran Wrap for 2 days; so time to do something. I kept the Silver Smoker w/mods at about 200...

    My First Brisket

I plan on having an option if things are going my way at first. I have a large foil pan and will transfer it to the oven foiled to finish if necessary. The first 8-10 hours are on the Silver Smoking blessing from above. I plan on pulling it at 165 and foiling with a 1/4 cup of apple juice...

My first fattie and first q-view

You're the Man; got those fatties right the first time it looks. What kind of cheese did you use? Did you wait at least and hour to let the meat rest and firm up before cutting? I didn't the first time but it worked out anyway. I also like to mix the sausage and some ground beef. I can't...

    Hello from Missouri!

    Smoking drumsticks

I don't know if this helps; but on the website www.bbqsuccess.com there is a July 08 newsletter that links to Bush's Beans Competition and a Video about slow cooking chicken and avoiding rubbery skin? If this helps you might want to check it out.

    Funky smelling Spares

I used to drive over the road pulling a reefer trailer. It wouldn't be hard to have a trailer run out of diesel for the reefer engine; especially if someone siphoned some fuel for themselves. Also, reefers can just break down and the driver had better catch it quick. Glad to hear you didn't...

    fatty patty

Friend, I didn't have quite that experience on my first one; but it was falling apart; so I put into a 2 # foil meatloaf tray with 6 holes poked in the bottom for a while; and then turned upside down on some foil and removed the tray. Worked out swell. Someone called it a "Road-Kill Fattie".

    Feral Cats

I've really never had much of a problem, I used to raise German Shorthair Pointers and they were generally disposed to getting them. My stepmother's cats were really fast about getting over 8 ft up a tree if they caught sight of a pup. I have used an RWS .177 target air rifle on them and some...

Question about meat mix for snack stix

Hope this helps; I lived in Southeastern South Dakota and with those deer we used 50 - 50 mix of vension to boneless picnic shoulder ground up for the snack sticks. Then we sometimes added high temperature cheese (1 1/2 lbs per 10 lbs of mixed meat and sometimes some ground jalapenos (...

    brisket attempt

If you want to cure the dog of chasing rabbits; find a road-killed one? Then wrap him to an electric fence you can turn on with electric fence wire ; hanging about 12-15 inches off the ground. Turn on the sprinkler after making sure the fencer is grounded well and let the dog loose. If he...

    2 Tri-ips, 1 Fatty, and Atomic Turds Q-view

Friend, I used to teach Vocational Agriculture and in the shop class I taught each student how to change the Oxygen and Acetylene tanks. This included how to check for leaks easily. I had a squeeze bottle with some Ivory soap and water in it. Just squirt it on the connections, all of them...
