    Yep, galvanized is not safe at all, unless the plan is to make people very, very sick and possible collect some life insurance money. But I wouldn't recommend it!!!

    Sounds great. I think I will be doing a butt and maybe some pastrami. I always forget to take the q-view, but will work on remembering this time. Good luck on your smoke and look forward to seeing the pictures.

    Chicken Skin Inedible?

    I always cook my chicken 275 to 300 to keep the skin crisp. You could also hit it on direct heat for about 10 to 15 minutes after cooking to crisp it up.
