    Yeah there is no problem with that. When I need to do it, I will smoke it for about 4 hours and wrap it and put it in the oven and let it finish.

    Well 8 pounds is the precook weight, I am assuming. You will only clear 4 to 6 lbs of meat. So you will want to make two. Even more so if you have a few big eaters coming over. Just my 2 cents.
