    Resting a Pork Loin Question

That looks phenomenal, going to need to try that some time! About how long did it take to reach 134? Guessing not much more than 90 minutes, if even that?

    Pulled Pork Pizza

So our preferred dough recipe is actually neither of these haha. Preferred is a poolish, of the three recipes we've tried in our pizza oven the poolish is by far our favorite, but pizza was a bit of a last minute decision yesterday so we didn't have time for the preferment to do its thing...

    Pulled Pork Pizza

Bunch of leftover pulled pork so we made a couple pizzas today. BBQ sauce instead of pizza sauce, mozzarella, and plenty of PP. One with pickled onions, one without. With onions was the winner, but the dough on the one without was a better recipe. Happy Sunday to all EDIT: I should add, these...

    Pulled Pork for son’s birthday

Well the party went off without a hitch. The kids had a blast and the adults left with full bellies and a couple of beers / high noons in them. We did pulled pork sandwiches and smash burgers. Easy menu with some overlap. Not many pics day of, as I was pretty busy! Ready for a Saturday at the...

    Started on the Outdoor Kitchen

Maybe overcomplicated, but could you put a wye with an air hose fitting on the line with a valve that's closed, and only open the valve after you've turned off the supply when you're going to blow down for the winter? Kind of like a sewer clean out, but with a valve since the water would be...

    Oklahoma Joe 900 Gravity Feed

Interesting design, haven't seen this one before and assume it’s new? There are a few of us on here who run gravity fed smokers, I think most are using the first master built series. Chargriller makes a gravity fed as well. As far as the cook quality, mine cooks some of the best food I’ve...

    Pulled Pork for son’s birthday

Thanks Sir! Much appreciated. Hah hah thank you - I was making them for me, my wife, and father in law. I think I made four racks of six before everyone tapped out, plus the rack of basic bitch tacos for the kids. Well it's open, smoothly I suppose is subjective :emoji_laughing:. Though I...

    Pulled Pork for son’s birthday

Little update as we wind down. Cook went off without a hitch. Ran at 275, took just about 9.5 hours, I think. Also had the Blackstone running for some carnitas tacos for dinner. Made for a hot corner! Frying up the carnitas and opened the smoker for a check Back to cooking dinner Dinner is...

    First Few Pizzas

My wife enjoys making pizza, so got her a pizza oven for Mother’s Day. First couple of pies here. Did a poolish dough yesterday - that is the way for sure. They’re a lot of fun, and the oven cooks up a pizza in about a minute! These are all my wife’s work. Pepperoni Carnitas pizza...

    Pellets vrs Gravity Feed ?

I run my 1050 with a hickory split vertical in the charcoal chute. I don’t think I’ll ever be convinced a pellet cooker will give better flavor.

    Restaurant Quality Smash Burgers

In my opinion all you really need for burgers is salt and pepper. I add a little garlic powder, and EVOO if the beef is above 80% lean.
