    Getting seasoning to stick on the meat?!

    If I use a rub, I coat the meat with mustard.  If I'm just seasoning the meat, I like to use a little olive oil on it, then let it rest for a bit before smoking. Just my $.02

    Found some draw latches today.  They're zinc coated, so I may burn them off in a coffee can or something, then just paint them; just to be safe.  I'll need to find some hardware for these, or maybe I could weld them after they're burnt off?

    My 2011 Garden, so far......

    Looks really great!  It's amazing what a few hundred miles can do.  I wish I had a garden that far along.  I'm just now thinking about getting stuff in the ground.  Indiana weather is always crazy in the spring, though. Good luck!!

    I would put water in the pan.  If you line the pan with foil, you will add a lot of life to the pan also.

    I have to agree with rbranstner, also.  I have a young nephew that won't eat anything grilled if it has grill marks on it, so I make all his stuff on foil when he's here.  Just a little extra step, but makes me smile to know he's enjoying it.
