Looks like the 2 wires at the bottom go to the heating element. The wire going to the top is most likely going to the relay. Can't tell without more pics information.

Put them in the sink to soak. Hot water and a tablespoon or so of dishwasher powder. Soak em overnight and then into the dishwasher. That powder changes the PH and makes it slick and soft.

Give Thermo Works a try. You have to determine are the probes thermocouple or RTD. Most they are RTD .
They are pricey but durable. I've had mine 6+years.

We make major salsa every year. We just follow Ball Canning recipe for general guidance. Tomatoes, peppers from the garden. Sweet onions, garlic and cilantro from the store. Vinegar and salt...that's it. Maybe touch of sugar if sweetness is not there.
