Noting new here but....yep, these "Pork Shots" or "Pork Candy" are incredbly simple and quite possibly nature's perfect food.
I have a holiday potluck at the office tomorrow so I figured I'd give them a try. I just used some store bought rub.

I myself have also noticed cheese takes on a better color the closer to 90 degrees you get. My first batch hovered just shy of 80 degrees and picked up some nice brown color. The 50 degreeish batches not so much but tastes fine. Don't know what kind of smoker you are running but I toyed with...
Looks good but........there was an awful lot of empty space in that smoker. After you sample that swiss......me thinks you will load the sucker up next time. :biggrin:
