    3 pound roast just put in marinade. Red wine, vinegar, water, garlic, onions, carrots, celery, all spice,peppercorns and bay leaves. Soak until SUNDAY . Sear, cook and serve with dumplings and kraut

    Time for some beef snack sticks. Mixed up 5 pounds of GB with some LEM seasoning and cure. In the fridge now, will stuff tomorrow Using collagen casings. Won't have time to smoke them, will just cook in the oven. Pics to follow.

    KA-BAR 1189 Stainless. Mom and dad gave it to me Christmas 1978 or 1979. Carried it 21 years in the U.S. Army. Lots of sentimental value.

    I was looking through supplies and came across an unopened package of collagen casings that must be 5 -6 years old.... How long do they last? My gut says they're probably trash....
