    Doing chicken for the first time

    I'm new here and have a lot to learn myself.  But, I inject with butter and chicken broth to ensure my bird stays moist.  I tend to slightly overcook poultry just to make sure it gets done.

    Welcome to SMF.  I'm from Chapmanville.  Glad to hear your chicken did well.  If the two racks of ribs came from the same smoker rack I would bet the problem is your temperature.  The other four racks of ribs may have been over or under cooked.

    BBQ Pitmasters: Season 3...Wrap up...

    I totally agree the show should have a KCBS type cook off.  My only fear would be they would screw it up similar to season 2.  Everyone would turn in chicken first with an elimination round to follow ie "put out your pit."  The number of contestants would work to well for the producers to resist.

    Pulled pork???

    Great advice.  I have done about 20 pork butts and I have never got one tender enough to pull.  I wish I would have looked on here sooner.
