Thinking about building a smoker out of an old freezer......

Thank you Scooter, I appreciate the time.  And the links.  Your pellet smoker lighting was interesting to say the least. :)  I have no problem with mine staying lit and burning while outside of the smoker, but once it goes in and I shut the door, all bets are off.  Even with the chip loader...

Thinking about building a smoker out of an old freezer......

Well, this has turned into me making more plans than I should if it can't be insulated.  Nuts.  I was really looking forward to doing this, too.

Thinking about building a smoker out of an old freezer......

So, I guess that kind of defeats the purpose of using a nice insulated freezer to keep the temps up, especially in the winter months, huh?  Or just remove the plastic and hope the insulation doesn't catch fire?

Thinking about building a smoker out of an old freezer......

Hi again Dave.  Thanks again for replying. My current smoker is a 2012 MES 40, the newer one.  It's the one that is near impossible to keep the AMNPS lit.  If I don't build or buy a new smoker, I will do the mailbox mod with it because I am sick to death of babysitting that thing and having to...

Thinking about building a smoker out of an old freezer......

Hi Dave.  I'm sorry, I didn't know anyone had responded.  I'm sorry I have confused you with my mailbox mod talk.  It's just that I have SUCH a hard time keeping that dang thing smoking.  No matter what I do, it usually has to be re-lit at least twice during a smoke.  For example, I smoked some...

Nobody has an opinion on this?

Thinking about building a smoker out of an old freezer......

OK, here's the deal.  I have an MES 40, the newer one.  It does an OK job, if I can keep my AMNPS lit (smokes GREAT when the door is open), and if I only smoke on one rack so everything is at relatively the same temperature. I really like smoking meat, and the wife and I have been thinking...

My take on a Surf and Turf Fatty...... (pic heavy)

That looks AMAZING , thank you for sharing.  My question is:  how much did all the ingredients cost to make that, and how many portions did you get out of it?

Is it the meat, the smoker, or what???

Thank you.  I have been told that they loved it.  Now, making the mailbox mod without tools is another story.  With the holes that have to be cut out of the mailbox, I don't see that being done without tools. Going to have some   and wait for some responses on that. :-)

Is it the meat, the smoker, or what???

I did just above the photo, but it's easy to miss.  I have a 2nd Gen. 2012 MES 40.  I have seriously been considering doing the mailbox modification, but I have NO tools to do it with.  I was actually able to make a chimney mod and attach it to the side of my smoker with magnets, though. :)

Thank you Kathryn and Danny.  Great comments.  Love the face banging it's head on the brick wall.  That's how I felt. :)

Is it the meat, the smoker, or what???

OK, here's the deal.  Last weekend, I smoked 5 butts for pulled pork.  Put them in at 12:30am on Saturday.  The last one came out of the smoker after all had reached the internal temperature of 200 degrees at about 6:15pm or 6:30pm the same day.  Had to relight my AMNPS at least three times...

pork butt and CSR's....all on the new XL for memorial day..w/Q-view

I can't answer for anyone else, but I got an AMNPS because the chips would catch fire in my MES 40.  That, and I really didn't want to have to worry about putting more chips in every 1/2 - 1 hour to keep the smoke going since I smoke most of my meats overnight.

Beef sirloin roast (graduation party rehearsal!)

Hate to ask a stupid question, but do you slice it by knife or electric slicer when it's cooled, or shred it like pulled pork? Have been thinking of doing a roast beef for a while now, and this may be the kick in the pants I needed. :)

2012 MES 40 vs. Old Model MES 40

This will make me look like the mechanically uninclined (don't think that's an actual word, but I think it gets the point across) idiot I am, but how did you attach the pieces of metal to the pipe, rivets?  If doing something that looks relatively this easy will keep my AMNPS smoking for the...
