So, I guess that kind of defeats the purpose of using a nice insulated freezer to keep the temps up, especially in the winter months, huh? Or just remove the plastic and hope the insulation doesn't catch fire?

OK, here's the deal. I have an MES 40, the newer one. It does an OK job, if I can keep my AMNPS lit (smokes GREAT when the door is open), and if I only smoke on one rack so everything is at relatively the same temperature.

Thank you. I have been told that they loved it. Now, making the mailbox mod without tools is another story. With the holes that have to be cut out of the mailbox, I don't see that being done without tools. Going to have some and wait for some responses on that. :-)
I did just above the photo, but it's easy to miss. I have a 2nd Gen. 2012 MES 40. I have seriously been considering doing the mailbox modification, but I have NO tools to do it with. I was actually able to make a chimney mod and attach it to the side of my smoker with magnets, though. :)
OK, here's the deal. Last weekend, I smoked 5 butts for pulled pork. Put them in at 12:30am on Saturday. The last one came out of the smoker after all had reached the internal temperature of 200 degrees at about 6:15pm or 6:30pm the same day. Had to relight my AMNPS at least three times...
I can't answer for anyone else, but I got an AMNPS because the chips would catch fire in my MES 40. That, and I really didn't want to have to worry about putting more chips in every 1/2 - 1 hour to keep the smoke going since I smoke most of my meats overnight.
Hate to ask a stupid question, but do you slice it by knife or electric slicer when it's cooled, or shred it like pulled pork? Have been thinking of doing a roast beef for a while now, and this may be the kick in the pants I needed. :)
