    I use a chimney to start my coals... wait about 10 minutes until they are going good and then pour them into the firebox. Spread them out a bit (not too thin, but not in a big pile either), then top them with a good amount of fresh lump. That usually gets my tems up and holds em where I need em...

    I will say that my guy's brats are pricy too, but they are huge, meaty (not as much garbage ground in) and mixed with a tasty variety of spices. Whether it's plain, mushroom, green pepper and onion, etc., they are way better than the Johnsonville variety, and worth the extra $.

    Walke Bros. (Claremore, Ok) is selling pork shoulder and butt for $1.10/lb. They have the best meats around these parts in my opinion... the ribs and shoulders I bought were cut today. Got to tour the facility a few weeks ago... clean, well lit, workers had hair up, gloves and gowns... top...

    I'll tell ya what... I think you are starting out with the right stuff. Pulled pork, corn and ABTs are hard to mess up. As for the ribs, you might try the 3-2-1 method to improve your chances, but nothing wrong with just going for it either. That's the way I do it and I've had good results...

    I tried something similar with fair results. Click on my mods link in my signature. I like what you are doing... might I suggest the you drill several holes in the flat part of your baffle to help disperse the escaping heat a bit. Perhaps extend the baffle down the pit a little further and...

    Northeast Oklahoma eh... as GT2003 asked, what town are you in... just curious. If you have a Warehouse Market grocery near you, head over and pick up a bag or two of Ozark Oak Lump. I'm getting 10# bags for $4 in Claremore and Tulsa stores. Got 8 bags on hand and plan to keep buying it...
