To keep your costs down and use the 3" pipe you have, an option to achieve the recommended length/volume is to have two stacks side by side. That's what I did and for the same reason, I already had a supply of 3.25" pipe and a small budget.
I'm still toying around with color. I'm leaning toward something like a deep dark cranberry. I think that would really set off the polished aluminum parts and would look good in our kitchen.
