    Cooked for our company picnic!

Thank you sir. I don't know about skill and confidence, but I have been described as hard headed with a exaggerated self imposed sense of my own abilities. My Mom (and my therapist) thinks I'm special! All kidding aside, I'm just a really nice guy who loves BBQ. Ask anybody who likes me!

LMAO!!!! Yeah, you'd think by my age I would have learned that mixing Southern Comfort with Budweiser effects my workmanship.

Thanks Those are 64 ounce Ketchup bottles. I made the labels. One of the perks of running a Graphics department is access to some cool software.

    Cooked for our company picnic!

My boss asked me a while back if I would be interested in cooking for our company picnic. Of course I jumped at the chance at the chance to see my smoker slap full with butts. We got some awesome butts from Charlie's Meat Market in Memphis. If your anywhere near hear, it's worth a drive to...

Any one use this meat grinder????

That looks just like my Sam Baere grinder. Mine has served me very well but I've never used the stuffer attachments. It's on my "to do" list.

newbie build using a 60g compressor tank

Yes, cut more out of the bottom of the tank. Personally I wouldn't worry about making the opening in the firebox smaller. Bigger than the 38 sq in will not cause you any woe at all. I would match the cut out to the tank. If you leave a lip above the bottom edge of the tank, you'll wish you...

newbie build using a 60g compressor tank

As far as functionality, I can't see any difference between the two options. I think the choice is normally an issue of space. What I mean by that is if cook grate reaches close to the end of the chamber then going out the side like you're talking about becomes the best option. It looks like the...

newbie build using a 60g compressor tank

To keep your costs down and use the 3" pipe you have, an option to achieve the recommended length/volume is to have two stacks side by side. That's what I did and for the same reason, I already had a supply of 3.25" pipe and a small budget.

    Vintage Hobart Slicer Restoration

I'm still toying around with color. I'm leaning toward something like a deep dark cranberry. I think that would really set off the polished aluminum parts and would look good in our kitchen.
