Why Foil so late....??? Try one not foiled at all! I used to foil mine about 165* and then smoke to about 200*. Now I just let them roll on thru till they hit the target temp. Then Foil in a pan...and let them have a cooler nap.

I have a great Chicken Stew recipe that can feed an Army of folks.
Usually I "stew" the chicken (boil it) but smoked chicken would work wonderfully in that too.

Dont inject at all....will be putting salt back in that you soaked out. Use a rub...and let it rip. I have about 4 corned beef briskets that I need to smoke in the near future too.
