I never upgraded to IE7 because it was such a mess. I finally had to get off of IE6, so loaded Chrome about a week ago. So far, so good. No crashes, and way faster than IE6. But if it acts up, I guess I'll try firefox.

I have tried up, down, and trimming the fat cap off. They all came out the same. I use a water smoker, so everything stays nice and moist anyway. So I trim the fat now.
If you have an off-set or drum, maybe it would make a difference (??)
The meat is without a doubt questionable at this point. Personally, I wouldn't risk using it at this point.

Before I knew better, I just left the membrane on. Now I remove it. Truthfully, I don't see any differance in the finished product. I remove it because now that I realize it's there, it kind of grosses me out.
Makes no differance. I use olive oil instead of mustard. IMHO, the oil will dissolve some of the spices, and they permeate the meat much better than using Mustard. However, mustard will give you a much better bark, so take your pick.
